Lemons are almost out of my price range. Social Security is not so secure in this economy. The lemons in the store have super thick rinds and very little pulp/juice. I am in S.W.Indiana,so can’t grow lemons 🍋 here,(without a huge hot house). I will likely use juice.

Kombucha is not the best culturing medium, as it is primarily yeasts. You want lactic acid bacteria, as this is what is used with dairy cheese (besides things like blue cheese etc, which also use mold) and which produce the most similar flavors. I like to use boiling water to cover the cashews, as it softens them much faster, but more importantly, it kills any mold etc spores on them. I do this directly in a glass container that I will later culture them in, as it gives me a better idea of how much volume/amounts I'm working with, as I like to do a large amount at a time. When they cool to just slightly warm, they go in a blender, and then back to the glass jars. Mixing in a little non fat milk goes a long way to adding a more true cheese like flavor, as you get more lactic acid. I also mix in cauliflower and tapioca or cassava flour. This is mainly to lower calories, as cashews have a good amount fat in them, and thus are pretty highly caloric.

I can’t believe you don’t grow parsley, it is so easy to grow, super healthy, helps deter pests in the garden and is super easy to harvest and dry ! Carrot tops are healthy and good too, but parsley is actually easier because one plant produces A LOT ! Plus it just keeps growing more stems after you harvest. I grow tons of celery too, I can the stalks and dehydrate the leaves. For those who haven’t grown their own herbs, you really don’t even know what they taste like, homegrown packs punch of flavor !!! Mirepoix is a French flavor base and is a handy canned pantry staple, onions, celery and carrots canned together you have a start to any dish !!! I suppose you could freeze dry it too !

Thank you for the advice on this pest. I didn’t have potato beetles but I did have tons of roly-poly‘s. I have also been finding caterpillars on my parsley plants. They completely decimated 2 plants. I had started pulling them off and tossing them out in the yard until I found out they were swallowtail butterfly caterpillars and I decided to let them have all they wanted just to bring butterflies back to my yard. The agricultural land sold behind my house and the new owner mowed down all the wild plants and now we don’t have bees or butterflies around here. Hopefully I can do my part and bring back some of the pollinators.

Omg i havent had lemon curd in forever. I had it on some ginger cookies from whole foods once and it was SOO good but it is not super affordable so we have only had it a couple times in my life. But now i want to try to make it! (And i am a rebel canner but if it is something someone has published and tried already im more likely to try it...the only thing i truly pay attention to is pressure can versus steam/water canning and following the times. But, i tried dry canning potatoes and that went well, and i have made pie fillings with tapioca starch (not clearjel) MANY times and have had no issues over the few years ive been canning. But an approved recipe does make me feel even better.
